The roots of the common slough Cattails are a good substitute for starch potatoes.

In a novel coming out in June, the main character makes cattail blueberry jelly. She doesn't give the recipe, though, and doesn't even tell what part of the cattail she uses. It's the most popular of her homemade products (probably as a conversation piece, but she doesn't say that). Called The Marsh King's Daughter.
