Mmmmm, that looks good. Ultimately, I want to earn my big boy britches in a year or so and brew a keg of
Novacaine or
American Barleywine. I have all of the basic microbrewing utensils and whatnot, but I'll really have to upgrade for these. They require a lot of patience. Like two years' worth.

Got a big pot of wort sitting to the side, cooling. I thought I was supposed to remove the sack of hops, but it looks like I leave it in for the fermentation process. I added a bag of octane booster (maltose, sucrose) in it for a higher ABV (about 1.5% more - should give me 7-7.5% when ready). As soon as it's cool enough (about 10 minutes), I'll start pouring it into the keg, then water-stir-water-stir-water until I get to the demarc on the back. Add brewer's yeast, and wait two to three weeks. I also got a Mr. Beer 5 oz. tasting glass to tell when it's ready to bottle. I threw out those cheap quart bottles that came with the initial kit, and got myself a full case of 16 oz. brown glass bottles, a gross of metal caps, and a manual capper. Do it right. (Note to self - need dedicated 8 quart stainless pot and measuring cup.)
