I remember that our small country grade school (1st to 8th) in Indiana had government surplus cheese, powdered eggs, butter and other items that were used to make our daily lunches. I saw it in the store room when I was helping out in the 5th or 6th grade move some big cans of food from the store room to the kitchen area. It was raining outside and a classmate’s mother was one of the two cooks.

This has been gong on for years. I remember some poor people in our neighborhood getting the cheese. And they did appreciate it.

Minorities do not like good cheeses. They think cheese comes in a wiz can or a velveta box. I'm not joking. I took a cheese plate to work one day with brie, gruyere, Havarti, ten year old white sharp cheddar, and a young nutty swiss. I served it with crackers, crustini, fruit, and flat breads.
You might as well have been feeding them tribbles from Romulan space?
The federal government also buys all the surplus milk from a dehydrating company. They then ship it to one of two companies in the US that rewets it, emulsifies it, adds vitamin D and trace minerals, pay for it in 2,000 pound sacks, then send it to warehouses until it's use by date expires, send it to a landfill, and repeat.
