How do they know some other group did not use that symbol?

The accusations that these were recently carved by (of all things) a Jew from Germany is ridiculous, but that's what happens when the substantial remains of a pre-Islamic civilization is under the control of savages.

Jews predate Muslims in Egypt by at least 2000 years.
Ok, leave the Bible aside, it’s known that the population of Alexandria was very Jewish in Ptolemaic times, they being brought there by Ptolemy the Great, about 300BC. So make it 1000 years of continuous residence as reliably attested.
As far as we know the “shield of David” (consisting of two letters “D”, one superimposed on the other), wasn’t used as a Jewish symbol until the Middle Ages.
There were certainly Jews in Egypt for a long period (papyri show semitic names for slaves about 3500 years ago). At various times Jews left Egypt (see DeMille) and returned.
Alexandria in Roman times was about 1/3 Jewish, and has been called the New York of the ancient world (a great port, with a varied population, and perhaps the economic capital of the Empire).
