It's National Chocolate Cake Day. How Are You Celebrating

I don't get all worked up about every food holiday, but I'm having trouble containing my exuberance for National Chocolate Cake Day. And after recent studies showed that chocolate cake, as part of a balanced breakfast, can help you lose weight? I'm in.

In case you're looking for a new favorite chocolate cake recipe to celebrate National Chocolate Cake Day in your own home, I thought I'd share links to a few of the recipes I've published over the years. If you've got a favorite chocolate cake, share your recipes in the comments below.

Mrs. Schembechler's Hershey Cake:

Bo Schembechler had his first season as the Michigan football coach in 1969. That fall, The Ann Arbor News ran a profile of his wife, Millie, and some of her favorite recipes.

"Mrs. Schembechler Enjoys Cooking With A Southern Flair," ran the headline. In the article. Millie described her decorating style, and shared her recipes for crab dip, southern shrimp gumbo, chicken and dumplings, rolled braciole and a Hershey cake.

Double Chocolate Layer Cake:

For something so delicious, it's a remarkably quick and easy recipe to execute. One of the things I love about the recipe is that you don't have to mess with double boilers or trying to melt chocolate in the microwave. The chocolate for both the cake and the frosting is chopped and then melted by adding it to hot liquids. I also love that there are no hard-to-find ingredients.

The only real challenge here is picking out what kind of chocolate you want to use for the recipe.

Meet Your New Favorite Chocolate Cake:

Here's what I love about this recipe: it has all the things that are wonderful about chocolate cake, like a deep chocolatey richness, without being too sweet. If you love dark chocolate like I do, and relish the kind of chocolate flavor that doesn't hurt your teeth with its sweetness, you're going to love it too.

The cake comes together fairly quickly, and bakes in just 25 minutes. Don't over-bake it, or it will quickly dry out.

Get a jump on Valentine's Day with this Red Wine Chocolate Layer Cake with whipped mascarpone: Is there a better expression of romantic love in food than chocolate? The answer is yes. Better than chocolate is chocolate and wine. And cake.

This cake is dense and moist, with just a hint of wine flavor. The whipped mascarpone frosting layers add a sweet tang to balance it all out.

Ina Garten's Chocolate Mocha Icebox Cake:

An icebox cake is traditionally made by layering cookies or wafers with whipped cream, then setting it in the refrigerator (or "icebox") overnight. The cookies absorb moisture from the whipped cream, and by the time you're ready to serve, they've taken on the texture of something resembling a layer of cake.

Oh my .. that makes me hungry for a maple-bacon-chicken sandwich. Sooooooooo good.

You mean your wife doesn’t yell at you for eating that much bacon ..??

Was not aware of the significance of the day but enjoyed Trader Joe's Chocolate Ganache tonight - with fresh raspberries. Yummy.

Ingredients ~
1 Cup butter
1 Cup sugar
1 Cup packed brown sugar
2 Eggs
1 tsp vanilla
1 tsp soda
1/2 tsp salt
1/2 tsp baking powder
2 cups flour
2 Cups oatmeal
2 Cups of chocolate chips
Walnuts to taste

Directions ~
Cream together butter and sugars, and add 2 eggs.
Add vanilla, soda, salt, baking powder, flour and oatmeal.
After all is blended add chocolate chips and walnuts.
Drop by large spoon on cookie sheet.
Bake at 350* 12-15 minutes.

We have a couple of friends that are real Cowboys and she gave me the recipe. Apparently they’re huge hits on the chuck wagons.

We had a Claim Jumper in Torrance, Ca. Closed down because of the gimmedats taking over the restaurant. :(

Might give that a try with some ginger cookies.

My mom used to bake cakes for people on the side. There were always 2-3 cakes in pans, in the freezer. (cakes that for one reason or another that didn't make the cut).

So, when the urge hit, I'd go and get a frozen cake and cut me out a slice.

Mmmmm

I like frozen cake.

According to Wiki How: International Bacon Day is the one day of the year for the world to come together and appreciate bacon in every way possible. Depending on the country, International Bacon Day is celebrated either on the first Saturday after the New Years in January, February 19th, or the the Saturday before Labor Day. Go out there and honor this pork with friends and family.

According to Nationaldaycalendar.com and Daysoftheyear.com it's Dec. 30.

On Facebook, November is national bacon month in Australia and the US.

Then of course there is the Muslim "holy" month of Ramadan, which is the 9th month of the Islamic calendar.
(What better reason to eat bacon?)

My grandsons love vanilla ice cream and orange sherbet floats using 7-Up. Their fav kind next to root beer floats.

It’s just a personal taste thing. I got a S.L. cake that was “fat free” by Mistake and it tasted like air. Their bread is always stale and their regular cakes are rather tasteless as well. To me anyway.

Thanks for responding. Seems like everything that says “low” anything has no taste. Wish they would leave our food alone. To me, they have removed all the flavor enhancers. Too much tastes like cardboard.
