Welsh rarebit is my go to Sunday evening supper in winter. YUM!
My favorite variation is the Golden Buck. Place a serving of Welsh Rarebit in an au gratin dish, float 2 poached eggs on top, and arrange buttered toast points and rashers of crisp bacon - at lease 4 each - surrounding. Guaranteed to give your veggie-tarian niece a heart attack.
