Probably just with wild yeast. This would still work, but you never know what you're going to get.

Well, they just made ales and darker, heavier beers before that.

Saccharomyces cerevisiae is the original beer yeast and seems to be everywhere in nature. It makes ale beer.

Lager yeast is Saccharomyces uvarum. It is more tolerant of cold and works more slowly. Lager yeast is rarer and leaves behind more sugar.
