Someone posted a corn casserole recipe on one of the Thanksgiving threads. I took it to church and it was a huge hit. Multiple people asked for the recipe and asked I make it for the pot luck this week. I was really impressed with the reception it received, so I’m reposting the recipe-
Corn Casserole
350 for 45 min. or until golden brown
1 can cream-style corn
1 can whole kernel corn (drained)
1 small container sour cream (8 oz)
1 stick butter, melted (1/2 C)
1 box Jiffy cornbread mix (or any 8.5 oz equivalent)
( shredded cheddar- 1- 1 1/2 C.)
Lightly oil 8x8 or 9x9 baking dish. Combine all ingredients and bake uncovered until golden.
Let rest 5 minutes. (Cheese can be added on top during the last 5 minutes of
baking if desired.) Can be made ahead and reheated at 350 for 20-30 minutes. Thaw first if frozen.
That sounds wonderful, and I’m saving it. (There was a Corn Casserole at a party I attended today, but I didn’t get around to trying it; so I’ll try yours.)
