I'll start off with in no certain order;
Handfights: A toss up but lean towards "Fight Club".
Gunfights: "Open Range"
Car chases: "Fast & Furious" franchise.
Well technically there was Godfather II.
Sorry guy, but you're wrong. Most is stunt drivers on closed courses in the countries the story is about, or a similar looking country.
I've read much about the stunts in that franchise. Although Bullit originally set the standard, F&F has taken it to a level that the Bullit director couldn't imagine or afford. Yes, some is CGI. I'm somewhat of a film critic (concept, story, plot, acting, direction, cinematography, action sequences) so I can tell the difference between live action and CGI. Maybe not always, but the F&F franchise actually has real car sequences.
The “never bring a sword to a gunfight” scene in Raiders of the Lost Ark.
Any CGI disqualifies it from being pure car chase. If above-average Joe cannot do it in his car then I do not find it exciting.

Bill Jack fight scene in the park. One of the best ever.
I love the scene in “It’s Mad,Mad,Mad,Mad,World” where Jonathan Winters destroys a gas station single handed. The chase scene is great, along with a stunt pilot flying that Twin Beechcraft through a billboard. No cgi there.

Chase:Bullitt
No debate.
Fast and Furious is so over-done its ridiculous. If you want to see a couple of great car chase sequences, check out Steve McQueen in “Bullit,” and Gene Hackman in “The French Connection.”
Yes, that movie was a “Tour DE force” of stunts. Sid Cesar locked in the hardware store basement was hilarious.
Just thinking about Peter Falk as a cab driver is hysterical in and of itself.
Of course the movie “Duel” was one long chase scene.
Gun fight:
