I'll start off with in no certain order;
Handfights: A toss up but lean towards "Fight Club".
Gunfights: "Open Range"
Car chases: "Fast & Furious" franchise.
Billy Jack smaller than his opponent, telling his opponent “I’m going to put the right side of my right foot right across your right ear and there’s not a damn thing you can do about it” (or something like that), and then WHAM! he drops the fella with a kick
Car chase - Road Warrior.
Car chase: Bullitt or French Connection, F&F is CGI BS.
Gun fight: Open Range or Heat
Fight: Heston versus Peck in The Big Country (totally realistic, not fake like all today crap). Enter the Dragon.

Hand fight: Raging Bull.
Car Chase: Ben Hur chariot race(vehicle chase)
Gun Fight: D-Day - Private Ryan
A highly underrated movie for firefight is Tears of the Sun.

Fist fight - McClintock - the mud fight
Gun fight - Tombstone - Doc Holiday vs Johnny Ringo
Car chase - Gumball Rally
Handfight: The Quiet Man (John Wayne)
Car Chase: The Blues Brothers, Bullitt
Gunfights: Any episode of “The A-Team”

The Transporter (with Jason Statham) movies aren't bad, but the plot is incidental to the car chase.
Some of the driving in the Red movies are pretty good, too.
