Clean the mushrooms to get the dirt off
Quarter the mushrooms vertically
50% olive oil (4 TBS)
50% butter (4 TBS)
Heat until oil it steams in cast iron (preferably)
Fry hot
Fresh Oregano de-stemmed, about 1/4 cup loose, add after a couple of minutes of frying the shrooms (optional)
Fry until at least some carmelization of the shrooms begins (moderate browning)
Add Salt to taste at the end only (it forces liquid out of the mushrooms)
Serve over really good bread
Option #2: Add fresh garlic roughly diced for the last 60 seconds only.
