Weekly Cooking (and related issues) Thread

It finally feels like Spring here today,and my thoughts turned to the wonderful things that will soon spring from peoples' gardens.

I thought I'd post a recipe for an old favorite that I recall from the 1970s and is difficult to find on store shelves nowadays:

Green Goddess Dressing

(This is a case where you really do taste the anchovies, so you may want to start with a smaller amount until you get the anchovy-level you like.)

2-oz. tin of anchovies, undrained

2 T chopped fresh chives

3 T tarragon vinegar

1 T fresh lemon juice

1 Cup sour cream

1 Cup mayonnaise

1/2 Cup chopped parsley

1/4 tsp. salt, or to taste

Black pepper to taste

Whisk everything together and chill.

(I have also used the anchovy paste that comes in a tube, and that works out very nicely for this, as well as for Caesar Salad Dressing.)

Does anyone have a recipe for what we in the US call 'French' dressing? (The bright orange stuff ;-)

Try swapping out half the anchovies (which I love, but too many people do not) for 1-2 oz. of well-chopped crispy bacon. Also, do you finely chop your anchovies or not? I don't care, but, as noted, some folks have a bias against them, and finely chopping them tends to give these folks one less thing about which to complain.

Just for the record, ol' SAJ was a very active participant on Lib27's cooking/recipe thread a couple of years ago.

Don't scrape the yogurt...heh heh heh, and comida buena a ti

One changeup that is unusual in the US, but is entirely tasty -- I promise! -- is the addition of ground cinnamon and well-chopped garlic either directly to a salad of greens or to the dressing.

Clearly, the quantity of c and g to add varies with the other components of the salad. Start off with just a bit, have a taste, then add more if you fancy.

I think a few companies still bottle and sell it, but I haven’t seen it in my area for decades.

It sounds like it would be a really good dressing. I’ve never tried it before. I have some cucumber salad dressing I bought recently that I’m going to try soon as well..

I like this French Dressing recipe. I sometimes use chili sauce instead of ketchup.

Really AMAZED that when searching for recipe of Green Goddess Dressing, most do not call for avocado. Perhaps this is just a ‘Southern’ thing. Living in Texas, GGD was seen on the grocery shelves way back when and they sported the avocado base. Having never before today searched for this type on the net; but low and behold most sites do not include that green vegetable/fruit....avocado. The store-bought was good, but Peppercorn/Ranch has always been a favorite.

I love that spring is coming an d we plant our garden.
I made this for lunch yesterday, as we got a lot of asparagus from the market. I added some thick grilled slices of bacon to the sandwich, as I knew my husband would not eat it without some kind of meat in it. It was really good.

Imho, there are a number of delicious dressings. The more fresh ingredients they offer, the better!
