Michelle Obama’s Personal Fight Against Boxed Macaroni And Cheese

Celebrating the fifth anniversary of “Let’s Move!” First Lady Michelle Obama explains to Cooking Light magazine that she had to get empowered in her own household to eliminate processed food.

Part of that experience was her personal fight against boxed macaroni and cheese, which, she admits, her kids loved.

At the time, her chef friend Sam Kass explained that boxed macaroni and cheese wasn’t “real food” and so the family shouldn’t eat it.

“My kids loved the macaroni and cheese in a box,” she explained. “And he said, if it’s not real food then we’re not going to do it.”

If you’re in your forties and fifties it’s safe to say many of us grew up eating the stuff. As a Catholic growing up in New England it was Kraft Mac n Cheese and Gorton’s fish sticks every Friday during Lent for me and most of the kids in my neighborhood.

I enjoy boxed every now and then but it’s pretty exciting the first time you make your own starting with a basic bechamel sauce. Everyone should try it. It’s a good gateway to the world of classical French pan sauces.

So make Mac-n-Cheese from SCRATCH, you ignorant beotch! My Grandma made the BEST Mac-n-Cheese with our allotment of Free Government Cheese when I was a poor black child growing up in Milwaukeestan.

Gawd, I hate her. She’s just so clueless and awful. HOW do these people end up in positions of power? How? HOW?!?!?

I lived on that crap in my early 20’s. I added tuna and peas to make it gourmet. Later I added Parmesan to make it really gourmet.

I survived and prospered without Big Mama Obama’s help.

Diana’s Mac-N-Cheese

8 ounces elbow macaroni
1/4 cup butter (1/2 stick)
1/4 cup flour
1/2 teaspoon salt (can be omitted)
A dash of black pepper
2 cups milk
2 cups shredded cheddar cheese (I grate up whatever ‘soft’ cheese is on hand, so long as it equals 2 cups)

Cook macaroni according to package directions. In medium saucepan, melt butter over medium heat; stir in flour, salt and pepper; slowly add milk. Cook and stir until bubbly. Stir in cheese until melted. Drain macaroni; add to cheese sauce; stir to coat.
