When the leaves just start turning yellow, you can start cutting them. Or if they get too beat up. I use rebent paperclips to hang them. I'll post a picture next time I hang a leaf.
I use romain lettuce. During the hot summer months, I rely mostly on chard. It's not lettuce, but it's a leafy green that can be eaten raw.
