For my wife, who has Celiac and watches her weight carefully...these are a Godsend. And they are super yummy with linguine and Alfredo sauce.

I once had Indian meatballs made of lamb with an almond in the middle and a yogurt mint sauce. Different, but very tasty.

My aunt made the best spaghetti & meatballs in the world. What a letdown when I was stationed in Naples to discover that meatballs are not native Italian. Moved on to Bolognese sauce. Will try original “Godfather spaghetti al Clemenza” soon.

I make mine with equal parts ground beef and pork - along with breadcrumbs, ricotta, eggs and parmesan cheese. Bake in oven, simmer in home made sauce, make meatball sandwich.
Wash it down with an RC Cola and a moonpie for dessert. Oh, baby.

Spotted owl makes a tasty base for meatballs. Mix with bread crumbs or crackers and season with paprika, basil, a dash of thyme and sea salt and pepper. Bake low and slow on a cookie sheet with a bay leaf under each meatball, turning once after about 9 minutes.
