Drug use is rampant in the industry. ...The same as in Medicine (Doctors). You just don’t hear about it because it is covered up.

I would not like the guy chopping the onions to be so stoned he didn't notice his fingers were being chopped as well.

Yes, it is. I sorta miss it. Those nights of prying bus boys off of waitresses with a crowbar in the linen closet, the cops busting the dishwasher (always at the beginning of the shift)....

I remember years ago when I ran a detox psych unit having four chefs in at once...that was one fourth of my population that week.

Those that are too stupid/stoned to do their job go quickly. Turnover in kitchens is very, very high. That tends to select for people that are very good at what they do, even if they use drugs. It's moderately controlled chaos in lots of places.
And always drama. Lots of drama.

I only have the book. I'd love the audio version. I know that Gordon hates drugs but I've wondered when he worked for the insane Marco Pierre White whether he had to use amphetamines to get through the day. White actually made Ramsey cry!
