Sales is hard, hard work! But, if you do well, you do well indeed. :-)

We’ve never done the reverse sear (heating the steak before searing it). Does it make a discernible difference in the end result? We just sear the crap out of it, and take it off the grill medium rare to rare.

The chocolate sounds good! With coconut, too!

I only cook reverse sear now. I'll put half a chimney of charcoal in the weber on one side. Salt/pepper/oil the steaks and put them on the other side of the cold grill. Put a piece of pecan wood in and let it go for 10 minutes. After that sear the steaks until done. (:
