I keep hearing over and over how tasty croc or alligators are.

One thing is fer sure, the Cajun Country will never starve.

I'm good with American alligator. I've done that professionally a couple of times. I treat it like catfish. Bread in cornmeal and cayanne and deep fry in small chunks. Serve with fries and catsup.

The native Americans and Cajuns lived on gators for years.

One of the strangest things I saw when I first moved to south Florida was the “Gator Stand” at the county fair (I live about 20 minutes from the Everglades). I will say that I really love alligator meat. It makes a better ‘nugget’ than chicken. I really like it in a steak form too.

Of course I am from Georgia and never minded venison either. Or rabbit.
