Even those that avoid fat and salt because "it's not healthy". Guess what? If you don't get fats and salts, you die quickly.
Everything in moderation, and listen to your body seems much more sensible.

I had a friend in college with several food allergies. He started dating a Jewish girl who was a vegetarian. Between the two of them, I don’t think they could eat anything!
My very best friend is a weedeater. But he’s not a a-hole. “You eat want you like to eat, I eat what I like to eat.” I find that, with meat prices today, I’m eating less meat. About half the time I substitute pressed tofu for meat. It’s quite delicious. And,,,, a lot cheaper!
Oh do I ever agree! And ALL the drama that goes along with it.
Part of this is probably the holier than thou attitude of many vegetarians and vegans. Those who keep Kosher rarely brag about it and don’t sit around condemning those who do.
I’ve seen vegans denigrate vegetarians and condemn meat eaters - at a church Thanksgiving dinner with, “I would never give my kids that, did you know how toxic it is?”
And a vegetarian (barring Hindus) or a vegan is almost certainly liberal, while conservatives rarely bother skipping the meat. It’s then an easy way to determine the political divide.
Or you can at least say that the vegan/vegetarian’s Gaia worship is just not compatible with your religion.
How much poison do you want, in moderation?
