It was a big week for John Besh, even by his eventful standards....
Apparently, several attendees of the workshop took Besh to task for lecturing about healthy eating on one hand while serving high calorie food at his restaurants on the other.
I went on to address a complex issue in very simple terms only to only be heckled by those that feel we can regulate restaurants to the point that our children will be happy and healthy, Besh writes in his blog, which appears on epicurious.com. In response to these suggestions, I pointed to a variety of other options that may be more conducive to ridding ourselves of this evasive disease.
He continues, And yet, time and time again, I was scathingly lectured and interrogated about nutritional-menu labeling and the dietary analysis of each dish we serve at all restaurants, which I reputed wouldn't solve the problem of childhood obesity.

The guy is a good cook but he natters away like an old hen while he is doing it.
LOL. Poor Besh got mugged by Moochelle’s people and wonders what happened. He still can’t figure it out. He apparently didn’t follow the script he was given. Now he’ll never be invited back again. I didn’t realize he was that naive.
The poor fellow should stick to cooking.
He doesn’t tend to cook light, although he often does.
Lots of Roux and lots of Bechemel with cheese.
Now wheres’ dem onion, bell pepper,celery, sausage and dem macaroni?
I bet Moochie never turned down Gumbo, or Fried Chicken or Mac and Cheese

Besh is on the television now and is flour butter a buttermilk.
He’s making biscuits wearing a chef suit and yakkin about his granny.
He’s doing it right but he is just such a nancy about it.
Shut up and cook Besh! and get dem gravy started!
