I prefer my beef steaks cooked medium rare. Thats when they are the juiciest. Nothing is better than eating a good steak across the table from a vegetarian trying to enjoy a chunk of bean curd or textured gluten.And then there is bacon.
Or even better - combine the two.
Bacon wrapped fillet...mmmmm.

Looks like Gorgonzola or Bleu Cheese on top of the filet. At a Ruth’s Chris Steakhouse you could have that filet with a heap of jumbo lump crabmeat on top, with Bernaise Sauce over that.
