Some wear it, some eat it..

Some even chase it down steep hills for sport..

No matter.. as long as Milk + Heat + Acid = Cheese

We'll find it resting on a wheat cracker eventually..

or shredded, sliced, diced, fondued, creamed, who knows.

It's Not quite a perfect food .. but close.

After a terrible 25 year hiatus, my dad’s favorite cheese has returned!

Give me real feta cheeses which means made from sheep’s milk. Best I ever had was from Bulgaria but Greece France and others do a good job. Feta with some olives, some raw onion, some good bread and some good canned tuna....yum

I’ve not had any in a long time, but http://www.loletacheese.com/ makes several local cheeses in Humboldt County, CA.

Cheese.

I found out I have many food sensitivities last March.
Cow’s milk (and even goat’s milk) and anything made with it are off limits.

Good news is, I started to really feel great within a week of eliminating my allergic foods, and I’ve easily lost 25 pounds since March.

Bad news is, although I live in the land of cheese (WI) and love the stuff, I can’t have any!

Enjoy your cheese, you cheese lovers!

(this means I have not even had pizza since February!)

(or lasagne!)

(now I really miss cheese...)

But I am back to being the same size as I was in high school 30 years ago, so WOO HOO!

The food sensitivity test-food allergy test I had can be seen at this website...they test for 200 foods for a total of $257 dollars, no insurance taken, no doctor visits. That keeps the cost of the test so low. This test saved my life. My sister had this test 2 years ago and begged me to take it, I did and she was right, I had many food sensitivities that were making me ill. FReepmail me with any questions.

(Did you know there are cheese schools?)

Did you think there were just people born with the talent for making cheese? :^)

Cheese making is fun and easy but it takes a lot of milk to make a little bit of cheese.
