I’m sure pretty much any vegetable like squash, turnip, parsnip, carrot would substitute? Pumpkin pie is all about the sugar and cinnamon. The underlying vegetable is essentially a bulking agent! Am I right?

I think I read somewhere that the original european jack o'lantern was turnip. I couldn't make something like that up.

Exactly!Even without the vegetable
— A down home Chess Pie will do the trick:

Original Recipe Yield 8 servings

Ingredients

1/2 cup butter
2 cups white sugar
1 teaspoon vanilla extract
4 eggs
1 tablespoon cornmeal
1/4 cup evaporated milk
1 tablespoon distilled white vinegar
1 (9 inch) unbaked pie shell

Directions

1.Preheat the oven to 425 degrees F (220 degrees C).

2.In a large bowl, mix the butter, sugar and vanilla together. Mix in the eggs, then stir in the cornmeal, evaporated milk and vinegar until smooth.

3.Bake for 10 minutes in the preheated oven, then reduce heat to 300 degrees F (150 degrees C) for 40 minutes. Let cool. Cut and top servings with whipped cream. You will think you have died and gone to heaven.

Most of the pumpkin pie fillings that are bought in a can at the grocery store are not made of pumpkin, but squash like butternut and such.
