Oh, pretty good this evening. The new diabetes med is working great (even the needles don't bother me) dinner is in the crock pot, and I'm just taking a break from renewing my Dell certifications (seven hours non-stop is enough for one stretch). Just had even more violent storms rampage through the area again this evening, and caused more property damage. Between the heat and the severe weather, it's has been one helluva year in Alabama so far.

Try this...brine a whole chicken for 24 hours and cook/smoke until the thigh is 167. Or you could do pieces, maybe for 12 hours...you have to play around.

½ C Salt - Kosher
½ C Dark Brown Sugar
2 tsp Garlic Powder
2 tsp Onion Powder
2 tsp Cajun Spice (Louisiana Cajun Seasoning)
2 tsp Celery Seed
