Okra and Tomatoes Au Vin-
Justin Wilson

2 tbsp. Olive oil
6 slices thick bacon, cubed
2 medium onions, chopped fine
1 clove garlic, minced
2 lb. Fresh-cut okra
4 medium tomatoes, cut into 6 or 8 pieces each
1 cup Sauterne wine or dry white wine (I only use about 1/4 cup)
1 or 2 tsp. Justin Wilson pepper sauce
1 tbsp. Worcestershire sauce
Salt
Put olive oil in a skillet large enough so that mixture can be stirred. Add cubed bacon, onions, and minced garlic. Sauté this for about 10 minutes. Add okra and tomatoes. Pour wine over this, and add pepper sauce and Worcestershire sauce. Salt to taste. Cook until okra is tender and has lost its green taste.

Hello! The last okra plant that I seeded came up yesterday, which makes about 3 weeks on germination, but I did end up with 100%. I had given up on about 5 of the jade in the little paper pots, but I hadn’t had time to replant yet, so they sat and finally emerged yesterday. Can’t remember it ever taking that long, and the warmth and moisture have been there! Be patient with yours. :)
