If they’re under 70 or 80 kilos, they’re pretty tasty. Over that they’re used for sausage. I was invited on a boar (called cinghiale in Italy) hunt in the province of Tuscany in 1995. Since I had not purchased a hunting license, I could not actually hunt but was part of a large group of spotters (the hunt seems more social occasion for the landed gentry and their urban friends than a hog hunt in the US).

I have tasted some wild boar meat once and it was delisious
quite sutable to feed the hungry masses including prison inmates, including all religious groops from the middle east

I have hunted and eaten wild boar from Texas and California. It is some of the most delicious pork that I have had. It is a little more chewy, and is very lean. It also has an excellent flavor.
