I love fresh green beans. And they are good also if you cut them up and add them to soups, but do it late so they are still crunchy.
But casserole I can live without - besides, isn’t making a casserole out of something what you do with yesterdays leftovers?
If nobody wanted to eat them yesterday, why would they all the sudden decide to eat them today?
When green beans are too fresh, they squeak on your teeth. I like them cooked till they don’t squeak on my teeth. Every other veg I like sort of al dente, just not green beans.
