It got down to -0.2F laase night according to the digital thermometer. Spring is still a long time out here in the Colorado Rockies. Have got the wood burning stove blasting for Thanksgiving.

I don't think I will cook a beef roast again. I was not impressed with how it came out. Of course I am expecting a restaurant taste and quality at home. But It wasn't near close!
My Wife is being kind. She said it was good. I told her I know good, and this was not it, at least for me. Just Darn!

No, I cooked it for the proper time for a medium rare. Used an instant read meat thermometer and I was at 130 when it came out. It sat tinted in aluminum foil for about 20 min. and the internal temp rose to 138. Not bad I thought for medium rare. The ends were cooked to what I would call medium well done. The center was very rare. I just am not comfortable with cooking a beef roast, I guess. For me it had no flavor. It was not tough but no flavor.
My wife says it was good to her, But I will not cook a roast beef again!

We got garlic from there last year. Loved it. Nearly 100% germination when we used his instructions. Saved some to plant this year, too. The Ajo Rojo is to die for.

Was it the “dry aged” part? That can be unappetizing for some people.

No, not the dry aged part. I trimmed the outer parts off including the fat areas and left plenty of good fat on the roast. Actually the roast cooked beautifully just like a roast should, a nice med. rare pink in the center and tender with fuller cooked portions on the outer edges. My Wife loves it. So it was not a total failure. I was expecting a more flavorful roast. Which was my mistake in not doing some kind of injection flavoring or marinating it. Like I said my wife really liked it, I was just expecting more than I should have.

The herb and spice rub was more than enough flavor for hubby and me. Any more would have drowned out the beef flavor.
Hubby will throw a fit if I marinate anything.
