This is the easiest Thanksgiving recipe I know, and it tastes GREAT. It is good for taking along when you have been invited to dinner with friends or family.

CRANBERRY WHIP

1 Pack of fresh cranberries
1 Granny Smith apple (unpeeled)
1-2 cups sugar (depending on your sweet tooth)
1 pint whipping cream
dash of vanilla

Grind cranberries and apple in food processor. Pour half of sugar over top and leave in fridge for at least 12 hours.
Whip whipping cream, vanilla, and remaining sugar until cream is stiff. Stir in cranberry mixture and some pecan pieces, if desired.

Eat as-is, or put a dollop on pound cake.

This is a recipe my mom got off the Bob Allison “Ask Your Neighbor” show on the radio in Detroit years ago. It is my duty to make it for all family gatherings and I stockpile raw cranberries during the holiday season just in case we want it sometime during the rest of the year. I usually treble the recipe. It’s sweet, tart, and yummy!

Cranberry Whipped Delight

1 package raw cranberries
1 cup sugar
2 c. miniature marshmallows
1 c drained pineapple tidbits
2 cups whipped topping

Grind up the cranberries and add the sugar. Let soak for a couple of hours. Add marshmallows and pineapple and refrigerate over night. Before serving, mix in the whipped topping. (I have also served it with the whipped topping dolloped on top of individual servings. It is a gorgeous red color.)

I have frozen the leftovers and eaten it as a frozen dessert.
