I haven´t eaten mammalian flesh for some 32 years or so, and try to otherwise keep kosher with poultry, fish, cheese, etc., because I believe that God would like us to think about what and why we eat, beyond just physical nourishment and recreation.

As much as you might like to, you don't even have to bring God into it at all. To avoid any religious objections, simply ask why human dentition developed with incisors which are present in carnivores and not herbivores.

Well rounded vegetarian cuisines like those of India, use lentils, beans to provide the iron and protein. In the USA, red beans and rice often provided the same function.
Western faddish vegans often fail to get enough protein in their diets.
Correct, perhaps they’d counter with that they’re evolutionary artifacts or we are an evolutionary dead end.
However, I prefer to keep my riposte strictly along the lines of gastronomical pleasure, thereby highlighting their puritanical, self righteous posture concerning their diet.
As in, I do NOT like the taste of rice wrapped in grape leaves, however a Lousianian boudin hits the spot spot on!
