Holstein make for sorry beef for some reason the meat will not marble well. Would do alright for hamburger if you have enough fat to blend in. Just a day or so ago some holstein calves sold on the RFDTV network for $54.00 a hundred weight and they weighed 450#, the same weight of Angus calves brought $154.00 per hundred weight.
