Try making real popcorn using coconut oil. Top with melted butter and salt to taste. You will never eat microwave crap again.

Coconut oil is solid at room temp so it never tastes greasy or oily.

Sorry Pappy - here's one just for you:

Esquite or Mexican Street Corn (gringo version)

Cook the corn according to package instructions. Drain and add mayo, cheese, melted butter, chili powder, salt, and Tabasco or green chili sauce. Stir well, serve and get out of the way!

There are of course many variations to this, from grilling corn on the cob and then cutting off the kernels, to just basting grilled corn with the rest of the ingredients. My family can't get enough of this, and in fact the son-in-law says that this could be a whole meal in itself.

Emeril's Hoppin' John Recipe

Ingredients

Directions

Heat oil in a large soup pot, add the ham hock and sear on all sides for 4 minutes. Add the onion, celery, green pepper, and garlic, cook for 4 minutes. Add the black-eyed peas, stock, bay leaves, thyme, and seasonings. Bring to a boil, reduce the heat and simmer for 40 minutes, or until the peas are creamy and tender, stir occasionally. If the liquid evaporates, add more water or stock. Adjust seasonings, and garnish with green onions. Serve over rice.

Blackeyed Peas are traditionally eaten on New Year's Day in the South for good luck all year! I usually add turnip greens for a special touch. Here's some Hoppin' John I fixed last year:

FrankenFranks:

1 jar grape jelly
1 jar chili sauce
2 pkgs L’il Smokies

Combine and simmer till heated through. Serve with toothpicks

Easy Crab dip:

1 lb cream cheese, softened
1 jar cocktail sauce
2 small tins crab meat, picked over

Spread cream cheese on platter. Spread with cocktail sauce. Sprinkle over crab, lightly patting it in. Serve with Townhouse crackers.

Those freeze well, too! I make gallon bags of them, cook and freeze for later breakfast fair, minus the beer and using Ham sausage with Texas Pete or Crystal hot sauce to taste. Great as almost instant breakfast for single guys ...

My sister calls this “10 Minute Dip”. That is because when my 4 big nephews (her sons) get ahold of it, it’s gone in about 10 minutes.

Barbecued Hamburgers

Hamburgers

• 1-1/2 lbs ground chuck 80% lean
• 1 lb ground beef 90% lean
• 5 eggs
• 2 cups UNSEASONED breadcrumbs
• salt and pepper to your own liking
• 2/3 cup of chopped FRESH parsley tops
• 6 nice size cloves of FRESH garlic (well chopped)
• 1 medium to large sized SWEET Vidalia onion (Chopped but not too finely)
• 4 oz. warm water…see below for instructions with water

1) Mix all of the above …thoroughly by hand…using plastic gloves of course ;^)
2) Add water little by little AFTER you have combined and kneaded everything else…continue to blend in mixture.
3) Heat ¾ cup of PEANUT OIL in good quality 9 inch frying pan. Helpful to use two burners and two pans simultaneously
4) Make hamburger patties and fry 4 at a time…be careful not to burn them but make sure they are well browned…helpful to use 2 nine-in. pans simultaneously.
5) HELPFUL HINT: While forming hamburger patties in your hands be sure to run your hand(s) under running warm water to coat burgers. Don’t run the meat under the water…just your free hand.

Sauce (Recipe is single portion- I always double it…because you never end up with enough)

1 cup ketchup
2 cups water
1/4 cup of light brown sugar
2 tablespoons of French’s mustard
half medium sweet white onion coarsely chopped
1/3 cup chopped FRESH parsley
2 Tablespoons butter

Combine all ingredients and after laying out hamburgers in large dutch oven broiler pan, pour the sauce mixture over patties and bake in oven covered at 350 degrees…until the smell in your kitchen is so tantalizing that you just can’t stand it anymore! [1 to 2 hours]

ENJOY!

Thank-you! I’ve been wanting a good bleu cheese dressing for my hotwings and this looks like one I should try.

I only deep fry wings, can’t stand them baked. I get grossed out if the skin is slimy like baked chicken usually has.

Sweet Potato Fries:

2 large sweet potatoes, peeled or unpeeled, cut into 4-inch long and 1/4 to 1/2-inch thick fries

2 tablespoons olive oil, or more as needed

1 teaspoon paprika

1/2 teaspoon chili powder

1/2 teaspoon ground coriander

Coarse ground rock salt and freshly ground black pepper, to taste

Directions:

Preheat your oven to 450 degrees F. Line a baking sheet with aluminum foil and set aside.

Place the sweet potatoes in a large bowl and toss with olive oil until the sweet potatoes are coated. Add the paprika, chili powder, coriander, salt, and pepper; toss to distribute evenly.

Arrange the coated fries in a single layer on the prepared pan. Bake for 20 minutes on the lower rack until the sweet potatoes soften. Transfer the pan to the upper rack of the oven and bake 10 minutes longer. Serve with Avocado Dip.

Avocado Dip:

1 avocado

1/3 cup mayonnaise

1/3 cup cream cheese

1 jalapeno, seeded and chopped.

2 scallions, white and light green part only, chopped

1 lime, juiced

Salt and freshly ground black pepper

Place the avocado, mayonnaise, cream cheese, jalapeno, scallions, and lime juice into a blender or small food processor. Blend for 1 minute or until you have a smooth paste. Season with salt and pepper, to taste. Serve as a dip for the Sweet Potato Oven Fries.

(Hass avocados make the smoothest and best tasting Avocado dip. )
