The tomatoes in that picture, for some reason, were seeded. I don’t make my salads with seeded tomatoes. And the pepper is a yellow Greek pepperoncini.

Here’s a good tomato recipe.......
Best Ever Bruschetta
This was well worth the effort and a great way to use tomatoes! Even if you don’t like tomatoes you might try this! This makes 4 muffin halves (lunch for 2) or 4 if you serve with soup or a salad.
2 English Muffins - split
1 large clove garlic - minced
1 tablespoon butter
2 leaves fresh basil chopped
1 large or 2 smaller tomatoes peeled and chopped
1 tablespoon chopped black olives
2 teaspoons tomato paste (I used catsup since I had no tomato paste)
2 teaspoons olive oil
1 teaspoon lemon juice
1/2 teaspoon honey
mozzarella cheese - sliced or grated
salt and pepper
Mix the softened butter with the minced garlic and chopped basil
Combine the chopped tomatoes, olives, and tomato paste (drain off excess juice from tomatoes)
Whisk together the olive oil, lemon juice and honey
Place the split English Muffins under broiler until golden
Spread with the butter mixture
Divide tomato mixture and spoon on muffins
Drizzle the olive oil mixture on each and top with mozzarella cheese
