OK all you FR cookers, it's 4:30 AM,Have you got your meat on yet??Stoked up the fire in the pit about 3:am, got the brisket on about 3:30,will put the ribs on about 10:am and the chicken about noon for a mid afternoon feast.FReeper friends, neighbors and kin folk will be here today to enjoy one anothers company and celebrate whats left of our liberty and freedom.What are other FReepers doing today?? Tell us about it and please, the more pics the better.
Too bad, we are gonna miss ya.

I hope I didn’t get my brisket on too late. Put in on the smoker at @6:30 am.
It’s at 210 - 220 degrees, 11 pounds. I’ve not done too many briskets, but I am figuring 1 hour per pound, hoping to eat around 6:00 pm.
If it doesn’t get done, there is no fall-back oven to retreat to, as I am at a campground.
It smells great, with the mesquite wood smoke permeating the area.
I’ll let you know how it turns out.
That should be plenty time to get done, should be good and tender. Hint, wrap in tinfoil and put back on grill for the last 2 hours or so, it will rejuvinate any dried out portion.
Got a freezer full of local shrimp out of the Wando river from shrimp baiting season.
Stationkeeper, that sounds awesome. I’ve got 4 pounds of gulf shrimp to cook tonight!
Eastforker, thanks for the 4th of July thread. It’s gonna be a good one. I’ll check back later, gotta cut the grass before the blazing heat sets in.

The dip is made. The meat, cheese and relish trays are done. Bacon is cooked. All that is left to do is slice the jalapenos, mix up the stuff to stuff them and put them in the oven. With lots of time to spare.
So sorry to hear that. Fingers crossed and prayers said.
