Bacon, redeemed

While paging through the latest edition of Bon Appetit, I stumbled upon some truly good news. They have a feature titled "10 Surprising Superfoods," items both healthful and up to gourmet standards. Item No. One: Bacon! Says the magazine, "... here comes Jennifer McLagan, author of a book simply called Fat, telling us that 45 percent of the fat in bacon is monounsaturated, the good-for-you fat that can help lower bad cholesterol levels. Better still, bacon's monounsaturated fat turns out to be oleic acid, the same fat found in olive oil. So that means that some could argue that bacon is about half as good for you as olive oil and about 100 times more delicious." I never would have guessed. Bon Appetit goes on to include the usual caveat: "Of course, moderation is key here, and you should seek out artisanal varieties without preservatives." So, I had two slices for breakfast. Not artisanal, but delicious anyway. It's always cheering to see an item escape the clutches of the health police and achieve rehabilitation.

I found bacon grease to be a reasonable substitute for lard in the carnitas I made a few days ago.

Uncooked bacon can appear to be unappetizing to some people. It could be they have been conditioned to think the bacon fat is evil due to it being demonized by many nutritionists.

I put the bacon on several paper towels on a plate and cook them in the microwave. A rule of thumb is one minute per slice but depends on power level of the microwave.

The grease is soaked into the towels.

The only problem I have with bacon is that while it is yummy, it’s also sooooo salty.

Try soaking it in warm to hot water first. Although I haven't tried this with bacon, it works well getting salt out of country ham and dried beef.

Bacon!!??

I love bacon....and if you're going to consume it, here's where you wanna buy it....expensive, but well worth it!

And....in a gesture of friendship and cooperation, may I suggest we send pounds and pounds of good, healthy, wholesome bacon to our muslim "brothers"....let's begin with the number one muslim....obammer!

I do it in a hot oven, 425 or 450, in a roasting pan. I put mine in the bottom of the pan and turn it after 10 minutes or so. It is a little more time consuming but easy and mess free (except for the pan). I don’t pour off the excess grease since the grease helps it cook faster (imo).

Microwave with towels to soak up the splatter. Not the same taste as frying but it works in about 7 minutes.
