I have discovered that an easy Irish Coffee can be made with a jigger of Carolan’s Irish Cream added to a cup of fresh-brewed coffee. Yummy.

Some say that a cream allowed to “mature”, 48 hours, makes for a highly satisfactory result. Having missed the last train home, on more than one occasion, I can attest to the drink’s drinkable qualities.

Do I understand the process? Is the cream allowed to age somewhat in a temperature zone unlike that found in a refrigerator?
