Uh, there were only 8 players on the team, not 15. There wasn't even a full second string to insert, much less a third. Look at the quarter scores. They did back off somewhat.

It would have been a good opportunity to practice the four corner offense. They probably werent using a shot clock.
I don’t really like that the coach got fired over this, even though he shouldn’t have let his kids run up the score that much; I’m a big believer in the opportunity for forgiveness and redemption.
As to this particular game, one possible solution would have been for the referee to meet with the two coaches when it reached say 30-0, officially declaring victory for the winning team. Then the referee and the two coaches could have created two new, balanced teams by mixing players from both teams. The two new teams would continue playing for the remaining gametime as a scrimmage. That way the losing kids would still have some fun playing ball under more balanced conditions, and the winning kids would have more fun too because there would actually be some real competition on the court.
