Meg, I would take a little recipe like this and add what I wanted and leave out what I didn't want. The carrots look attractive in it and bet they would be good. I believe the Canola oil may be used as it helps thicken. Frankly, I would use Crisco or Wesson oil, if thats what is on hand. Use your ham in place of the smoked turkey, etc.
Four meal size servings: 1 pound dried baby lima beans, soaked over night 2 carrots, finely chopped 2 small medium onions, finely chopped ½ pound smoked turkey in a thick slice, cut into ½ inch cubes 2 tablespoons canola oil ¼ - ½ teaspoon cayenne 1 bay leaf 2 cups chicken stock, plus 1 qt water (or use all water) Salt and freshly ground pepper to taste
Yummy, but yes I would substitute another oil or shortening for canola. I do not like it, might use a mild olive oil.
Thanks, jaycee..I downloaded some recipes to pick and choose from..many had carrots, too..I think the oil may be for cooking the onions a bit..I use canola oil a lot.I use it in baking.
Sorry your day is dark and dreary..Mine has been mostly sunny but cold and windy....I hate to get out in the rain..but there has been too little rain lately..Wish we had yours!
