Actually, hot DP was more common several years ago...but never real common.

Where do you live? We "bread" round steak and veal cutlets...and fry it.

A friend and I were laughing recently about her MIL who fried everything in lard --(pig fat). It was so unhealthy that she lived to be only 101...and probably died when she started eating store bought food.

Do you smoosh (I'm sure there's a technical term) the cutlets out flat first? Everyone competes for the title of "Best Tenderloin" here. At our local grocery, you choose your pork loin from the meat case and they make your tenderloin while you watch. They are fresh and delicious and I don't even LIKE breaded tenderloins. (That's just between us... an admission like that is tantamount to rooting for OSU or UM.)

My grandfather ate a lard sandwich for lunch every day of his life and lived well into his 80s. I'm convinced it's all a crapshoot. lol
