One butternut squash cut into 1" cubes. Lay out on parchment paper.
Brush with butter.
Bake at 400 degrees for a 30-45 minutes.
Brush with butter again, sprinkle freely with brown sugar and cardamon. Salt to taste.
Bake another 15 minutes.
if you want to kick up your squash, after mashing it and adding butter and brown sugar, try throwing in some crushed walnuts....unbelievable!......we discovered this by mistake one year, when my hubby thought crushed walnuts were brown sugar...
