It sounds like your tastebuds need a change of pace. Here's something easy. Get a box of this at the store. Here's the recipe we use:

1 pkg Golden Curry made by S&B (found in the oriental section of many large grocery stores)
½ onion
1 zucchini sm.
1 bell pepper or more
2-3 med. potatoes
1-1 ½ lbs chicken
2 carrots (lg.)
2 stalks of celery (lg.)

Pour 2-4 T. oil into a pan, heat, add chopped or sliced onion, fry for aproximately 5 min. add cubed chicken, brown.
Add the remaining ingredients (cut all veggies into bite size pieces) simmer until all the veggies are tender, add water as it cooks if necessary.
Serve over rice.

I will second the recommendation for S&B curry mixes.

We fix a lot of Indian and Asian curried dishes, and I always see this in the store, but never buy it because I don’t know what to do with it!

Thanks for the recipe.
