Planning Stage

Just what could she be thinking, with so bemused a gaze?
Is she contempating something in the past, or is it future days?
She has her choice of suitors, and clearly has a plan.
Perhaps she hasn’t figured out which one will be her man.

She’s going to make him work for it, before she tries to please,
Whoever wants to win her hand should practice on his knees.
She’ll make a very loving wife, there clearly is no doubt,
And by the time of choosing she will have it all worked out.

She’ll make him want to win the world, and bring it home to her,
And everything she wants to have, he’s certain to prefer.
They’ll have the happiest marriage, he’s destined to agree,
Because she’ll clearly make her stand, before he bends his knee.

National Sponge Cake Day

Lemon Sponge Cake

INGREDIENTS:
1 cup cake flour
1/2 teaspoon salt
1 teaspoon baking powder
3 eggs
1 cup white sugar
1 tablespoon lemon juice
1/2 teaspoon lemon extract
6 tablespoons hot milk

DIRECTIONS:
Sift together flour, salt, and baking powder. In a large bowl, beat eggs until fluffy and lemon coloured. Gradually beat in sugar. Stir in lemon juice and flavoring. Add sifted flour mixture gradually while beating; beat only enough to blend. Add hot milk quickly 1 tablespoon at a time, beating until blended. Pour into ungreased pan at once.

Bake 350 degrees F (175 degrees C) for 45 to 55 minutes, or until golden brown and firm to touch. Invert, and cool in pan. Then loosen sides, and turn out on cake rack to cool completely.
