I’ve never had Johnny Cakes.

I’m going to save the recipe and try them. I’ll need to get to the store for some cornmeal first.

Thanks for sharing the recipe. Those Scottish Eggs also sounded interesting.

I got the recipe for Johnny Cakes out of the July, 1976 issue of Bon Appetit. I have made them for over 30 years. They like to stick to the skillet - so you need oil for sure - I use bacon drippings. They are crispy and almost lacy. Hope you enjoy them, Amy! (Some recipes call for baking powder and/or egg) but I stick to the original.
