I got the recipe for Johnny Cakes out of the July, 1976 issue of Bon Appetit. I have made them for over 30 years. They like to stick to the skillet - so you need oil for sure - I use bacon drippings. They are crispy and almost lacy. Hope you enjoy them, Amy! (Some recipes call for baking powder and/or egg) but I stick to the original.
It looks like something my family would enjoy on a Sunday morning.
I will get to the store again next week and pick up some cornmeal.
