Yummmmm, sounds delicious :) Hey, gran, here's an idea... don't allow it to cook down much more, instead, invite the rest of us over for diner. :)

Soup is good for a diet. I buy soup by the quart containers at my favorite little Chinese restaurant. It is a clear base soup tht is absolutely chocked full of good stuff, shrimp, chicken, beef, dumplings, snowpeas, carrots, celery, etc. Alone it is flavorful and very good, good but pretty mild, the thing that zips it up to another level is a small little cup of hot sauce.... Add that in and, oh, my, it will cure whatever ails ya :)

Oh I’ll finish this off with some hot pepper and lemon juice. Just to KICK it up a notch...as Emeril would say..;)

One of my fav spices now is Old Bay seasoning. I used it for Chowda all the time, now I put it in all my soups and sauces.

I won’t cook this down too much, as I still like to keep the veggies a little firm. I just tasted a meatball...yummmm..

Oh...this pot would feed you all too, lol. I’d hate to type out what I have in this thing besides a whole roasted chicken, (love them because then I can strip it and boil the bones) and I’d guess at least fifty or more small meatballs.

Can’t wait to eat it with some nice hot crusty rolls. (I have to count those carbs..lol.)
