The laws of supply and demand simply mean that as the value of barley rises, so will the number of producers willing to grow it. Prices will then stabilize, and sudz will be saved.

Futures prices for European malting barley, which is used for brewing and distilling, have risen 85 per cent to more than EUR230 ($320) a tonne since last May.

Still well worth the price, though. Heck, at that price, maybe I ought to buy a "tonne" or two.
