It turned out GREAT! I used two small boxes of sugar free lime jello, a regular thing of cream cheese, a regular sized container of sugar free cool whip and a third of a cup of lemon juice, because I forgot the lime juice.

I made it per instructions and poured it into a ground pecan crust.

Steve loved it and so did my eldest (very picky) jedi!

A great dessert. Thanks for doing the research!

Speaking of low-carb friendly snacks, here's one I discovered on my own awhile back, completely by accident:

I accidentally had the oil kinda hot when I was going to try stirfrying some kale, and it went all light and crispy. I've been making it that way once in awhile every since, and it turns out there's a recipe for it on the Atkins site! Kinda cracked me up. I don't bother with the way they have you slice the leaves...I just dry them and then tear them into smallish pieces.

Cooking it this way probably ruins any value the stuff has as far as vitamins go, but it's awful good.
