Recently .. everytime I try to click on a PDF File link though Adobe Reader ... it completely crashes my IE
Do you know what would cause that?

Could be a number of things that might be causing that. What I would do in situations like that is right click on the PDF file link and click "Save As..." and save it to the desktop. Then when you double click the desktop shortcut Acrobat opens up without having to use IE.

Welcome :)
IE is tied right into the operating system, and when it's open, it wants to use up as much memory as it can, even if another application is leaking memory, IE is consuming that leaked memory too.
