The look he would give to anyone who dared refer to him as “African-American” made me believe he would not be against taking the head and eating the liver.

The Cambodian Khmer *banditos* we worked with circa 1969-70 thought that the liver was the tastiest part.

I have been around those who took heads, but only for trophies or for psywar reasons. I haven't run across any neat recipies. Yet.

Most of the “recipes” I am aware of were simple – roast or stew, and raw for the liver and heart, although it was common for some of the local RVN river gunboat crews to roast the heart – strictly for ceremonial purposes.
