I just made a couple of banana nut breads for the jedis...'cept one of 'em is sans nuts...Joshua isn't a fan of the nuts.

Easy recipe!

Banana Nut Bread

1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup white sugar
1/2 cup chopped pecans
2 eggs
1 Cup mashed bananas (I used three medium bananas)
1/2 Cup oil
1 tsp vanilla

Preheat oven to 350 degrees F. Grease and flour two 4x8" loaf pans. Set aside.

Sift together flour, baking powder, baking soda, salt and sugar. Stir in nuts eggs, bananas, oil and vanilla.

Divide into prepared pans. Bake for 45-60 minutes. Cool on a wire rack for 10 minutes before removing from pans.
